It's been a while since I made eclairs - or as we also call them, too: "love bones" (Liebesknochen)  ::krazy

very similar, though the pastry is typically not split, but rather filling the pastry via a small hole with custard while using a piping bag.

we have three types which I frequently come across, and all of them are generally made the way I describe above:

1. Bulk mini frozen éclair. It is fully prepared, you just thaw them and then eat them. I detest these, they absolutely have no life to it. I've come across them at a lot of parties. They suck.

2. Supermarket éclair. Full sized éclair, the pastry is pre-prepared and often shipped to stores frozen where the bakery department then fills with custard and tops with chocolate frosting/icing. This is what I ate the other day, they are good value and actually a delightful treat.

3. Fresh made éclairs from actual small store bakeries (sadly, fewer TRUE traditional bakeries by the day here in the US). Tender pastry and fresh custard, it just can't be beat. You pay the added cost, but you get a perfectly made pastry with love.

My family used to always host a Sunday night dinner (common old-school US tradition), and my Grandpa would always be over. Him being the eldest of the family, we would always serve his favorite desert...chocolate éclairs.

So yeah, I've had my fair share of éclairs.
